Meatloaf
This classic comfort food is easy to make and is fabulous for leftovers… one of my faves is a sandwich of a slice of meatloaf on toast with mustard and a slice of swiss. You can get as simple or as adventurous as you like – add herbs & spice, substitute chorizo for part of the unseasoned ground meat, put in minced peppers, mushrooms, or other veggies like celery and carrots. Here’s the basic recipe:
- 2 pounds of Grateful Growers unseasoned ground pork (or do 1 pound ground pork, 1 pound of a different ground meat like beef, ostrich, venison, lamb, goat, buffalo…)
- 1/2 cup minced onion
- 3 cloves minced garlic
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 cup breadcrumbs
- 2 beaten eggs
- 1/4 cup ketchup
Mix everything together in a big bowl, then dump it into an ungreased loaf pan or baking dish. For a loaf pan, bake at 350 degrees for about an hour. If using a shallower pan, adjust cooking time to 30-40 minutes. Let rest 15 minutes before slicing.
